  2. Just because the dish is called "Aglio e olio" doesn't mean you should put oil everywhere.

  3. Everyone, listen VERY CAREFULLY what Vincenzo has seriously confirmed as facts!

    (1) NEVER EVER add Oil to Pasta Water !!!

    (2) NEVER EVER add Peas to pasta water 😧….👈🤣

Ahhh…Finally you you revealed the best trick to make the best Aglio e Olio!!! a Muddica Atturrata lightly roasted in hot pan with some pinches of Parmigiano and a drip of olive extra virgin oil!!! That is the extra kick that will raise up to Heaven this dish givin' it a sort of beautiful UMAMI flavour… A big hug from Trieste from a "caprese".man.

  5. I would have at least minced the garlic finer. No oil (EVO or otherwise) in the water to cook the pasta. The pasta is submerged in the water while the oil floats purposelessly on the top of the water. Not disastrous, just an unnecessary waste of oil. Pepperoncino! I grow chilies as a hobby, including a couple of Italian varieties, so no problem there (I would have probably added a bit more but that is personal taste). Add salt, if required, AFTER tasting the the dish…arrghh!! Trying to keep leftover cooked pasta from sticking together is like trying to keep concrete from setting! There are dishes devised to use leftover cooked pasta. Basically quite good but he has picked up the bad habit of flinging salt into a dish before tasting it.

  6. put oil on boiling pasta, then threw it in the end. kinda waste considering you need a very good oil and its very expensive. also peperoncino too few for the amount of pasta, you barely feel the chili.
