Moroccan-Spiced Carrot and Chickpea Salad
Ingredients:
– Carrots – 4 medium
– Chickpeas (cooked or canned) – 200 g
– Fresh cilantro – a small bunch
– Raisins – 50 g
– Almonds – 30 g
– Ground cumin – 1 tsp
– Ground coriander – 1 tsp
– Ground cinnamon – 1/2 tsp
– Olive oil – 2 tbsp
– Lemon juice – 1 tbsp
– Salt, pepper – to taste

Preparation:
1. Grate the carrots and place them in a large bowl.
2. Add the chickpeas, chopped cilantro, raisins, and toasted almonds.
3. In a small bowl, mix the olive oil, lemon juice, cumin, coriander, cinnamon, salt, and pepper.
4. Pour the dressing over the salad and toss to combine
