Vegan okra stew with fluffy, no-bake bread

  1. I’m doing a project where I find a food from every country and vegan-ify it. For Benin, I made a fevi (okra stew) with amiwo (bread).     **Ingredients**

    **Fevi**

    600 grams (2.5 cups) okra, chopped

    1 tomato, diced

    1 onion, diced

    1 cup (250ml) vegetable broth

    2 cloves garlic, minced

    2 tbsp tomato paste

    1 tsp sriracha sauce

    1 tsp paprika

    Salt

    Pepper

    Oil

    **Amiwo**

    4 cups (500g) corn flour

    1 onion, diced

    2 cloves garlic, minced

    3 cups (750ml) vegetable broth

    4 tbsp tomato paste

    Salt

    Pepper

    Oil

    **Instructions**

    **Fevi**

    1. Heat oil to medium heat. Add the garlic, onions, tomato, okra, spices, and tomato paste. Heat until the vegetables begin to cook (3-5 minutes).

    2. Add the vegetable broth and bring to a boil.

    3. Once boiling, reduce to a simmer and let simmer for 30-45 minutes.

    **Amiwo**

    1. Heat oil over medium heat. Add the onions and garlic and cook until they begin to turn translucent (3-5 minutes).

    2. Add tomato paste and stir to cover.

    3. Add vegetable broth and bring to a boil.

    4. Once boiling, add the corn flour, stirring throughout to remove lumps. This should quickly form a thick dough.

    5. Add the dough to a baking dish and let sit to settle for 30-40 minutes.

  2. I feel like you’re just forcing it at this point, a lot of these recipes are half assed. It would be better for you to focus on quality over quantity
