    I always share this whenever I see cream cheese frosting.

    To make thicker frosting what you should do is, using the same quantity of ingredients, cream the butter and powdered sugar first until its smooth – don’t forget to sift your sugar.

    Then add your cream cheese cold from the fridge and mix till smooth. Don’t over mix, the more you do the softer it gets.

    When you add sugar last, the sugar molecules latch onto to the water molecules in the cream cheese (cream cheese is at least 50% liquid) and drag it out of the cream cheese which is what makes a “sloppy” or loose cream cheese. And the more you mix the more water it pulls.

    By mixing the butter and sugar first, the sugar molecules become coated in fat and its much more difficult for them to get to the liquid in the cream cheese. Adding the cream cheese cold reduces this ability even further … and ta da! thicker frosting.
