    I’d cut it across about where the end of the knife point is, across the narrow part. Part would get turned into bacon, the other part slow roasted till fork tender then blasted with high heat to crisp the skin.

    1. vacuum seal largest pieces possible and freeze.
    2. purchase the book- Charcuterie: The Craft of Salting, Smoking, and Curing by Michael Ruhlman
    3. purchase supplies
    4. Cure, cook , and slice
    5. be the most popular person you know because you are generous and share

    I use my oven instead of wood smoker and it turns out great

    We used to buy salt pork to make red chile beans with and one time I’m sitting at work ready to eat my lunch and I’m stirring up my little tupperware container and up floats a nipple. I was so grossed out just the way it bobbed up to the top, I lost my appetite.

    We went back to strips of bacon instead.

    On a side note there’s a YouTuber that does Julia Child dishes from the art of French cooking, and one I watched not long ago required him to use pig skin. The cuts he got from the butcher was almost all mid belly with all the nipples. It was comical watching him attempt to deal with it for the recipe….
