    Pancit Bihon Guisado

    # Ingredients:

    * 250g bihon (rice noodles)
    * 200g chicken breast or pork, sliced
    * 1 cup cabbage, shredded
    * 1 carrot, julienned
    * 1 onion, chopped
    * 3 cloves garlic, minced
    * 2 tbsp soy sauce
    * 1 tbsp oyster sauce (optional)
    * 1 ½ cups chicken broth or water
    * Salt and pepper to taste
    * Lemon or calamansi for serving

    # Instructions:

    1. **Soak bihon noodles** in water for 10 minutes. Drain and set aside.
    2. **Sauté garlic and onion** in a pan. Add chicken or pork and cook until browned.
    3. **Add vegetables** (carrot and cabbage) and stir-fry for 2-3 minutes.
    4. **Pour in broth**, soy sauce, and oyster sauce. Bring to a boil.
    5. **Add the bihon noodles**, mix well, and cook until the noodles absorb the liquid.
    6. **Season** with salt and pepper. Serve with lemon or calamansi on the side.

    More positively, seeing pancit here in this sub filled me with nostalgia for a job I once had, where I worked with these two lovely little Filipina ladies who would occasionally, for the benefit of the whole department, bring in a big tray of pancit luglug (which is this, but with shrimp and thicc rice noodles) and lumpia, Filipino spring rolls. It was so good and very much appreciated, because there was really nowhere near our building to get something to eat and I had to bring lunch pretty much every day.

    Filipino food is great! (I ain’t touching balut, though.)
