While I have done spatchcocked chicken on the fire a few times, we decided to do a whole chicken this time. Watched some YT tutorials and then did what I could with the equipment I had.

Oh man, this is my new favourite way to do a roast chicken. Smokey, juicy, flavourful. 10/10 recommend.
