    Huh, didn’t realize this was his favorite sandwich. I should try this some time, as I like mortadella.

    This sounds like it would be a bit… bland? I guess if you’ve got a really good mustard it would help. Also if your mortadella is really good and peppery and crisped up well that would help.

    It does remind me of some of the really good sandwiches you can get in parts of Italy that they sell by beachside, just big flat bastards with good-tasting whatevers in there. Nothing fancy, but it’s fresh and fun and you enjoy a nice day with them.

    I made this exact sandwich last weekend, inspired from his Attitudes book. So so so good. Toasting the bun in the pan with the residual mortadella fat was just surreal.

    Man, I made this last week and thought it was kinda meh.

    Not bad by any means, but I didn’t get the hype

    Mortadella is…fine I suppose. Just white collar bologna.

    I’d like to add that I’m not criticizing what you love, it’s just not for me. I’m happy that you’re happy!
