Lentil Soup with Sourdough

  1. I roasted a head of cauliflower and blended it together with a jar of roasted red peppers to make a creamy and flavorful base.

    Separately, I sautéed garlic, yellow onion and carrot in olive oil, added roasted broccolini, chicken bone broth, and the cauli/ red pepper mix. Added garam masala, turmeric, chili powder, thyme, and steamed lentils.

    Simmered the whole pot together for a bit, added salt and pepper to taste, and ate it with some fresh local sourdough bread.
