This is by far one of the best steaks I have ever had and cooked to absolute, buttery perfection. Do not sleep on a good looking chuck roast. You can either break it down and cook each part separately, but I enjoy grilling it whole.

Side to go along with it was loaded tots.

    Whenever I reverse sear, regardless of the temp I start searing at I can never get this type of char. How’d you do it exactly? What temp did you start searing at?

    chuck is a fine cut of meat for low and slow smoking or grinding into hamburger. but cooking it up to a med rare steak and this would be a VERY CHEWY chunk of extremely fatty meat and connective tissue. There is a reason that this is the cheapest cut of beef available.
