Your friends and family will be so impressed. You don’t have to tell them how incredibly easy these tarts are, but they’ll attest to the fact that they’re delicious and beautiful.

For 6 Veggie Tarts

1 sheet puff pastry, thawed overnight in the fridge & scored into 6 rectangles
assorted sliced veggies such as zucchini, tomato, asparagus & mushrooms
1 egg beaten with a teaspoon of water (egg wash)
salt & pepper
Assorted dried herbs of choice such as thyme & oregano
cheese if you like such as parmesan or goat cheese
Drizzle of honey

Preheat oven to 425 degrees.
Artfully place veggies in 6 segments on a parchment lined baking sheet.
Sprinkle with salt & pepper and herbs to taste.
Add cheese & a small drizzle of honey if you prefer.
Please a piece of puff pastry over each of the 6 segments,
Brush with egg wash,
Bake for 20 minutes and enjoy.
