Hi all
I am about to make kimchi which I love and unfortunately the shop I use to get all my ingredients does not have gochugaru spice.

I got 3 different ones
1. Hot paprika
2. Hot paprika crushed
3. Cayenne pepper

Can I use one of these instead or even mix them I stead of using gochugaru??

    You can make something great with this but it won’t be kimchi as you know it, instead it’ll be your unique delicious spicy cabbage dish. First decide if you want to salt the cabbage separately then add a pepper paste or mix the cabbage in a brine like you’d do for [nabak kimchi](https://www.koreanbapsang.com/nabak-kimchi-water-kimchi/). I’d also check with r/fermentation for ideas and advice because they do a lot of fun, non-traditional kimchi variations. Just remember that those peppers powders will be spicier than gochugaru (at least the two on the right, not sure how spicy hot paprika is) so adjust accordingly

    These 3 items should not be used!
    Hot paprika is nice for soups, so depth of flavor, but won’t provide the heat you needed. As for the cayenne, it will provide you with too much heat, for a small amount. I would wait and get the gochugaru from a market or online. Don’t rush what would make you happy.
