    I’m italian. Pancetta and Bacon aren’t ingredients of Carbonara. You should use “Guanciale” (I don’t know its name in english)

  5. Carbonara can be made with guanciale OR pancetta depending on where you are from. My nonna used whatever was cheaper, and she was Sicilian (actually born, lived, died there. ) bacon usually has liquid smoke so it changes the flavor more. If it’s your preference, go for it. It’s still Carbonara.

    But if you put peas and cream in it… lol 😆

    I’d totally eat this btw. It looks delicious. I’d need more pecorino for me personally

  6. That’s the only one of the “classic 4” Roman dishes I haven’t made due to fear of screwing it up. Glad we like scrambled eggs, too.
