Sausage Gravy and Biscuits:

Ingredients:
For the Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
6 tablespoons cold unsalted butter, cubed
3/4 cup cold buttermilk
For the Sausage Gravy:
1 pound breakfast sausage
1/4 cup all-purpose flour
2 cups milk (whole or 2%)
Salt and pepper to taste
Instructions:
Biscuits:
Preheat your oven to 425°F (220°C).
Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Cut in the butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
Add buttermilk: Pour in the cold buttermilk and stir until just combined. Do not overmix.
Shape the dough: Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick rectangle.
Cut the biscuits: Use a biscuit cutter or a glass to cut out biscuits. Place them on a baking sheet lined with parchment paper.
Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown.
Sausage Gravy:
Cook the sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and cooked through. Break it up into small pieces as it cooks.
Make the roux: Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to remove the raw flour taste.
Add milk: Gradually pour in the milk, stirring constantly to prevent lumps. Continue to cook, stirring frequently, until the gravy thickens.
Season: Add salt and pepper to taste.
Serve:
Assemble: Split the warm biscuits in half and spoon the sausage gravy over the top.
Enjoy: Serve immediately and enjoy your comforting, homemade sausage gravy and biscuits!
