  1. No. You made pasta with tofu. Carbonara is a dish with recipe just like chocolate cake. If you make a chocolate cake, but substitute cinnamon for chocolate, is it still a chocolate cake? No. It’s a cinnamon cake. Now if you use milk chocolate instead of dark chocolate, it’s still chocolate, just like you can sub pancetta for guanciale.

    I like Tofu. I don’t mind reasonable subs. This is…not carbonara.

    though it is said the predecessor to carbonara does not use meat, it is not called carbonara. more like pasta alla uovo (im not italian, could be wrong).

    People are wild, I’m a traditionalist but come on y’all. Its a vegetarian substitution. Its wrought from the passion of nostalgia, a recognition of flavor through the lens of mercy. Thank OP, their sacrifice doesn’t diminish our love of guanciale, it enables it.

    A place in my town has a “carbonara” with mint, peas, cream, parm, and bacon. And a sous vide egg yolk on top. Redirect your ire to those carbonara criminals, and leave OP be.

    Looks really delicious! Still it can’t be more funny, that vegetarians have so many dishes named the same as their meat counterparts. Vegan sausages, steaks, meatballs, Bolognese etc. simply why?
