    PIC #1: Greek yoghurt marinated chicken that was oven-baked until just done, feta, zucchini, cherry tomatoes and tzatziki. I didn’t have pita and it was too late in the day to make some, so I defrosted some garlic naan. Eaten by tearing off portions of naan and piling on portions of everything.

    PIC #2: Shared dinner of eggplant lasagne, my roast potatoes with grated parmigiano, and a simple last-minute salad. I don’t know the exact lasagne recipe as my housemate made it and found it online. For my roast potatoes, I boil them in salt and bicarb, drain when fork tender, add EVOO and homemade Greek seasoning (https://keytomylime.com/mediterranean-seasoning/), put the lid on the pot, and vigorously shake to rough up the outside of the potatoes. That’s what’s going to create that unbelievable texture and crunch! Then I put the spuds in the air fryer for about 25 minutes and grate parmigiano over the top before serving.

    PIC #3: I’ve really been enjoying the convenience of breakfast burrito meal prep but wanted to bring it closer in alignment with MD. So what you’re looking at are roast potatoes, scrambled eggs with spinach, and turkey mince with ingredients and method similar to this recipe for Greek turkey meatballs ([https://kaleforniakravings.com/greek-turkey-meatballs/#recipe)](https://kaleforniakravings.com/greek-turkey-meatballs/#recipe). I add sundried tomatoes and omit the egg as I find I don’t need it.

    Looks yummy!
    Your third photo looks like the 3 sets of dishes I’ve accumulated over the years and I love it!! I never really cared or thought about it but they go well together.
