    Who wouldn’t love this steak? Who gives a shit about the haters as long as you enjoyed it!

    I saw your other post. Some people thought the crust was a bit much but most everything else I read was positive.

    I would eat that until I popped… or pooped.

    If you enjoyed it then that’s really all that matters. The inside is cooked nicely but the outside looks burned. Reverse sear is a good method to cook something this thick.

    I only complain about char being too much if it becomes too rigid and dry, distracting from the tenderness and taste of the meat.

    This is slight tad more than I would aim for but it’s looks great and would eat 1/2.

    Did u use a black rub to get that crust? If not then yea you overseared a bit. But some people like the bitter burnt taste too. Other than that, beautiful cook.

    If you like a burnt crust, then grey matter and raw in the middle, that’s perfectly up to you.

    It would not be how I cook it. For 3″ ribeyes, I reverse seat to 115°, cold sear in pan to just under 122°, 10 minute cutting board rest. Gives it a perfect side to side med rare pink.
