Recipe
1. Toast 3g black peppercorns until fragrant and ground with a mortar and pestle
2. Grate 100g pecorino romano
3. Cook your pasta in generously salted water until al dente and save a cup of pasta water
4. Using the pasta water mix in with grounded peppercorns and grated cheese into a paste
5. Over medium heat, melt a knob of butter and mix the cheese paste in. Add in cooked pasta and vigorously emulsify (tongs/tossing both work)
6. Top up with more pecorino romano and pepper (you have now made Cacio e Pepe)
7. Shave some black winter truffles if you can get fresh ones because they are a game changer!
