Been practicing for that crispy meat lace a lot lately and this turned out pretty close to what you might get at easy street in LA. Had to make some in n out style fries as well. Used a black stone griddle that was 620+F and bone dry (no oil). Whole family couldn’t stop talking about it while they ate. Highly recommend.

    Look, those are – I guess – textbook for what the internet is calling smash burgers these days. Well done as far as that goes. But to me, it’s just too damn much. It’s just a slab of crisped beef with every last bit of everything fried right out of it and turned into a crunchy thing that doesn’t really resemble a burger. I love smash burgers (what they’re actually supposed to be – not the increasingly viral extreme version). But that thing there, I would not be interested in eating.

    Btw – any burger of any kind MUST have 80/20 at a minimum. It shouldn’t be a one off or a luxury – you should always use 80/20, or even 75/25. Much more than that it just kind of melts and doesn’t work.

    Gorgeous. I’ve never thought of putting bacon on a smash, they’re enough work and cleanup on their own. 80/20 is the perfect blend for burgers, and while it’s not a rare opinion, I’ll still die on that hill with my other 80%ers.
