I grow x-hot peppers in my backyard every year. Some years it's ghost peppers, others it's Carolina Reapers. This year it's Trinidad Scorpions 🙂
I freeze them when they're harvested in the fall and use some of them for nacho cheese
Recipe:
- 1 cup milk
- 1 320g bag shredded old cheddar
- 1 tbsp onion powder
- 1 tbsp white pepper
- 1 tbsp sodium citrate (this is the emulsifier – you can buy it in 1KG bags on amazon)
- 1-2 diced x-hot peppers
Combine all ingredients to a sauce pan on high heat and whisk frequently for 2-4 minutes. That's all 😁
Tastes great and has a good kick

Looks great.
This looks great!! How thick is it? I’m wondering if it would make a good cheese sauce for Mac n cheese
Saw your other post with the chili and we have very similar recipes. Definitely gonna try your nacho cheese.
This is what I come here for. Looks awesome.
Yes, please!
You used preshredded bagged cheese without it making the consistency weird?
