We are so ready for soup, it looks like Fall and it feels like fall. This Cheesy Poblano Corn Chowder is delicious anytime of the year, it is hearty and with a good slice of bread on the side you are set for a delicious meal. Once you get your ingredients ready it’s easy as 123, it just flows. Get some good relaxing music playing and it’llbe fun preparing this dish, and i know you and your family or friendswill love it!

1 Tbsp Rendered Bacon grease
4 Thick Cut Bacon slices (1 inch pieces)
Corn off 5 ears of Corn or ( Frozen or Canned)
2 Medium Russet Potatoes ( 1 inch cubes)
2 Roasted Poblano Peppers (chopped)
3 Finely minced Garlic Cloves
Salt as needed
Pepper as needed
1 1/2 tsp Smoked Paprika
4 C. Chicken broth
1 C. Milk
2 1/2 C. Freshly grated Colby Jack Cheese ( Or as needed) use your favorite melting cheese
Chopped Cilantro as needed in Corn Chowder
1 Large Pickled choppedJalapeño (optional)

TOPPINGS______
Chopped Cilantro
Bacon pieces
Queso Fresco (as needed)
Avocado cubes (as needed)

  1. I hope Ron is right and soup weather is on the way. It is here today in Northern California. I bought some fresh corn at the farm stand yesterday, just for soup. 🤞🤞 I hoped for a recipe and here it is.
    Rachel, I’d love to know more about the different chilis. I like warmth, hubs loves very hot, so maybe something in the middle.

  3. Thanks! I am going to make this! I am American, living in Bogota, Colombia and often cant get a lot of ingredients, but can get these! I miss the vegetables from Vermont where our corn is incredible and many others, but here, while their corn is what we fed cows, there are so many fruits, I dont know what 75% of them are in the market. I try new ones and sometimes I win, sometimes not so much LOL. Thank you Host and best wishes to other posters

  10. That soup looks so delicious! I have a question ….are poblano peppers spicy or hot? I cannot tolerate jalapenos or anything spicy at all! If poblanos are spicy, do you think I could use mild canned green chilies instead?
