Authentic Moroccan Harira Recipe
Ingredients:

1 onion, finely chopped
3 cloves of garlic, minced
Olive oil (or vegetable oil)
Small cubes of meat (beef or lamb)
A handful of chickpeas
A handful of lentils
1 tomato, peeled and diced
1 tablespoon tomato puree
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon turmeric
A pinch of cinnamon
1 liter of hot water
Fresh parsley and coriander, chopped
A handful of vermicelli
1 egg
Lemon wedges for serving.

Instructions:

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
Brown the Meat: Add the meat cubes and cook until browned.
Add Legumes and Tomato: Stir in the chickpeas, lentils, diced tomato, and tomato puree.
Season: Add salt, black pepper, turmeric, and a pinch of cinnamon. Mix well.
Add Water: Pour in about 1 liter of hot water. Bring to a boil, then reduce the heat to low.
Simmer: Let the soup simmer for 2 to 2.5 hours, stirring occasionally. The longer it cooks, the more tender the meat will be.
Add Herbs and Vermicelli: About 15 minutes before the soup is done, add the chopped parsley and coriander, a handful of vermicelli, and one beaten egg. Stir quickly to distribute the egg evenly.
Serve: Serve the Harira hot, with lemon wedges on the side.
