Homemade pickled red onions, basil mayo, balsamic vinegar, greens, and blackened chicken breast served with a side salad

    I wanted to share the pickled red onion recipe because it’s ridiculously easy:

    1 red onion, sliced

    1/2 cup apple cider vinegar

    1/2 cup white vinegar

    1 cup water (filtered or bottled is best)

    1 TBS sugar

    1/4 teaspoon salt

    Put onions in the jar. Add the rest of the ingredients to a pot and bring to a boil. Once at a boil, pour into the jar with the onions. Let cool a bit before transferring to fridge. Let them pickle for at least 24 hours.

    Now you have yum to add to anything!

    (Feel free to play around with different types of vinegar or more/less sugar and salt. The important thing is that you need equal parts vinegar and water. I think this recipe is pretty good as is though! Tangy-sweetish flavor for sandwiches, salads, burritos, tacos, Mac and cheese (bomb), whatever!)
