Went tuna fishing last Monday in Westport, WA. We caught 31 albacore. I canned my portion last Wednesday and today I’m having a tuna melt on my back porch in the sun. Tillamook cheddar, sour dough and hot sweet snacker pickles.

    Some salt and vinegar potato chips would set that sandwich over the top. I’m sure it was great the way it was though!

    Hopefully you didn’t can all of it. Did you save some steaks or other large pieces? Idk I’ve ever heard of it with tuna, but it’s a big enough fish that it should have a decent amount of cheek and collar meat. So cooking a head or a whole smaller one might be good. Did you at least get stock from the carcasses to store in the freezer? I reduce all my stocks and just dilute a few spoons after thawing to make a few cups worth.
