Creamed Spinach with Bacon and Mushrooms
Ingredients:
200g fresh spinach 150g mushrooms, sliced 4 slices bacon, cut into small pieces 1 small onion, chopped 2 cloves garlic, minced 1 cup heavy cream 1/4 cup grated parmesan cheese 1 tablespoon butter Salt and pepper to taste Nutmeg to taste Instructions:
In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the pan and place on paper towels to drain off excess fat. In the same skillet, melt the butter and add the onion and garlic, cooking until the onion is translucent. Add the mushrooms to the pan and cook until golden and all moisture has evaporated. Stir the spinach into the pan and cook until wilted, about 2-3 minutes. Pour in the heavy cream and add the Parmesan cheese, stirring until the sauce thickens and blends well with the spinach and mushrooms. Season with salt, pepper and a pinch of nutmeg to taste. Add the cooked bacon back to the pan, mixing all the ingredients well. Cook for 1-2 minutes more to allow the flavors to blend. Remove from heat and serve hot as a side dish or main course. Prep time: 10 minutes | Cook time: 20 minutes | Total time: 30 minutes

Its yum right. Love that dish. I make it a bit more tuscan style with cherry tomatoes or sundried for a bit of freshness/zest.

I get real nervous cooking chicken breast on the stove, I always think it’s gonna turn rubbery or that I’ll take it off before it’s done so I usually make shredded chicken breast in the crockpot or fried chicken tenders/cutlets. One day I’ll get it right
