Sauté 1 onion, handful of mushrooms, can of diced tomatoes, garlic, oregano, red pepper flakes, salt, pepper.

Add turkey, cooked quinoa, 1 cup of Greek yogurt, and a handful of spinach and cook until the liquid begins to reduce.

I air fried the bell pepper shells alone for about 5 minutes to get them warm and soft. Then added the filling and topped with feta and air fried for another 5 minutes.

Served with broccolini 🥰
