  1. Sometimes you wish you could sell it for an extra $2/lb, sometimes you get 60lbs of garbage that ends up as mostly trim or beef stew.

    Good on you for taking those chuck eyes home. When they priced them higher than regular chuck, we would make a killing, nothing but profit

    Looks really good. My local meat market will sometimes have ungraded chuck roll steaks (we call them Agujas in south Texas) which amazing marbling. They cut them about 1/4inch and go perfectly on the grill and then I cut them up for tacos.
