    This happens to me, too, but I don’t know why! My only guess is there’s too much dough in the tin, so there isn’t enough room for expansion. But that’s just a guess.

    I did my first whole flour shokupan yesterday and it looks exactly the same.

    Started with a semi dry poolish for half the flour the day before.

    I think it’s because there is not enough gluten in my flour (t110 kamut), but I might be wrong
