Spicy feta dip (Tirokafteri)

1/3 clove(s) of garlic.
3 tbsps olive oil
1/2 chili pepper (hot pepper of choice)
1/2 teaspoon(s) chili flakes.
400 g feta cheese.
200 g strained yogurt

Horiatiki Salad (Village Salad)

1 large tomato
1/2 cucumber
Red onion
1/2 cup Pepperroncini peppers
Pitted Kalamata olives (from bar)
1 Green pepper
100g of Krinos feta

Dressing

1 Tbsp oregano
Light salt and pepper
Generous glug of olive oil
1 tsp of red wine vinegar

Chicken Gyro Recipe

For the marinade:
1lb boneless skinless chicken thighs
1 tsp salt
1/2 tsp pepper
2 garlic cloves, pressed
1 tbsp dried oregano
1/2 lemon juiced and lemon zest
2 tbsp olive oil
1 tbsp paprika
1/2 tsp onion powder
Authentic Greek pita (warmed for serving)

Bake at 400 for 60-75 min
You may baste in between
Slice and serve with onions, tomato’s, fries and Vince’s tzatziki and the controversial yellow mustard lol

Note: if you don’t have a Vertical Gyro Oven Plate, cut an onion in half, place it on a baking sheet lined with parchment (or foil) and position two wooden skewers vertically into the onion and voila, you made your own spit and don’t need to buy one!

Macaroni Salad

227 g Elbow macaroni
1/2 cup Red onion diced
3/4 cup red pepper diced
1/2 finely chopped celery

Macaroni Dressing

¾ cup mayonnaise I use olive oil mayo (175g)
¼ cup sour cream (70g)
2 Tablespoons sweet pickle juice
1 Tablespoon red wine vinegar*
1 Tablespoon granulated sugar
1 teaspoons dijon mustard
¼ teaspoon salt
¼ teaspoon ground black pepper
â…› teaspoon garlic powder
1/2 tsp smoked paprika
â…› teaspoon crushed red pepper

Mix and refrigerate before serving
