Reverse seared Akoushi tenderloin, with fried prosciutto, caramelized onion jam, duxelles and stone ground mustard on lightly toasted croissant bread. Served with a red wine reduction (Cabernet Sauvignon, shallots, garlic, thyme, rosemary and sage)
