Any ideas about what to make with soy sheet knots?
I randomly bought a package of soy sheet knots today thinking they may be similar to soy curls, but now I'm not so sure. Any tips for use? Or recipe ideas?

When I make my rendition of Chinese chicken and sweetcorn soup , I use these instead of the chicken . Tastes great. What I call Chinese chicken and sweetcorn soup, is what they sell here in the local Chinese takeaways. I’m in Scotland.
It’s an extremely simple dish. Here’s a how to make a litre-ish of it, yes easy to scale up , just takes a bit longer too cook.
1 stock cube (it used to use chicken before I turned vegetarian, now I use vegetable) couple of garlic cloves , teaspoon of mustard (not the American sweet crap, use proper english or French mustard) pinch of salt , ( i use sea salt) fresh ground pepper, sometimes I use just black, sometimes rainbow peppercorns, whatever pepper you have. Splash of groundnut oil or sesame oil. (You could use whatever oil you have on hand, its to stop it sticking to the pot). a handful of sweetcorn , I use frozen, but you could shuck some from a cob or use a small can.
Boil the kettle, then put the above all in a pot, add approx 1 litre of water, stir well, slowly bringing to the boil, then let it simmer, now add in a handful of the tofu knots. Let it simmer and fuse for about 10 minutes (if doing bigger pot let it sit longer) now mix an egg, slowly pour into the pot , let it cook a couple of mins (if you have a steamer thing fir eggs use it, the local shops here do it cooks like a super extra chunky noodle) either way , the egg doesn’t take long to cook. You could try an egg substitute if your vegan, adjust time for that sub.
Serve , tastes good dunking seaweed crackers in it, or spring rolls. It’s sold as a small starter here in the local takeaways.
Summary of ingredients Water, stock cube, garlic, mustard, salt, pepper, groundnut oil, sweet corn, tofu knots , egg or substitute.
Ps 1 litre is approx 2 American pints.
