Recipe
1. Grate a generous amount of parmesan cheese (pecorino works great too)
2. Hand peel your king oyster mushrooms – i think it looks great for presentation, but feel free to dice if you want). Separate your oyster mushroom into individual pieces.
3. Finely dice chives and shallots.
4. Saute your shallots in a knob of butter until translucent and fragrant.
5. Toast your arborio rice for a few minutes and deglaze with dry white wine (this adds acidity, deglazes the pan and another layer of flavour). Reduce it by 75-90%.
6. Heat up 1L of chicken or vegetable stock. It is important your stock is heated so when you slowly add it to your rice, it doesnt stop the cooking process. Add a couple of ladles at a time to cook your rice, by the time you use up 1L of stock it will pretty much be fully cooked, but taste as you go and adjust accordingly.
7. Sear your mushrooms on medium high heat to get a nice sear on them and they are done!
8. Once your rice is cooked perfectly, add in your cheese, a few knobs of butter for extra richness, a crack of black pepper. The cheese + stock should salt your risotto quite a bit so please taste and season accordingly and not over do it.
9. Place your mushrooms on top of your risotto, add in your chives and cheese and now you have a beautiful mushroom risotto. In my case I had some extra black truffle from last video so i shaved it over it cos im a fun guy 🙂
