Hi all, it’s my first time posting here and only my third or fourth time making a steak at home.

Reverse seared: 250°F for 20 minutes and then stainless steel sear for 1 minute on each side, pressing down with spatula for 30 seconds.
Overall I’m happy with how it came out but it was closer to medium than medium rare. Share your thoughts and any tips if you have any! Thanks!

    Forgot to add that I covered it in foil and let it rest for 10 minutes. It was really really yummy and I am happy with the minimal gray band!!

    I’m surprised you got it that cooked in 20 minutes at 250F, I did 35 minutes at 220 yesterday on a thinner steak and got a rare finish (in my post history). Might want to use another thermometer to check your oven temp, the calibration might be off. A hotter and shorter duration sear might also help, though the crust looks great.

    I would not press down on the spatula or steak next time when you sear as it will expel the juices. For a better sear make the temp higher in the pan and cook for less time.

    Solid! No notes, many of mine come out just like this even though I aim for a touch less done, and if it were made for me I would eat every bite and compliment you a couple of times during I’m sure.

    If you feel like you’ve got that mastered, take the next step and come up with a good compound butter and share it with me, mine always end up kinda “just ok”

    How did you get that beautiful crust? Ive only cooked two steaks so far and my dry rubbed one looked yucky (tasted decent at least, but i want pretty meat)

    Looks great. I would’ve rendered the fat a little more (fat side down on a sizzling hot pan)- what’s great is that you can use the juice from the fat to cook your steak in. Otherwise, bravo! Hope you enjoyed.
