Did my very first Apple pie filing. Recipe below. Four jars look like the one on the right, one looks like the one on the left. I’ve never seen this before.

Recipe:

24 cups apples
5 cups sugar
3/4 cup lemon juice
5 cups water
Spices

Water bath processed for 20 mins, filled with 3/4” headspace.

    Looks like the recipe I just made!

    How much headspace did you use? Also, my recipe had called for cooking apples pieces for one minute and then add to your liquid/spice mixture.

    I got 4 quarts of apple pie filling.

    It looks like the apples expanded and started floating in the right jar and your syrup siphoned in the left jar. As long as your seals are good, both jars are safe. Apples are notorious for floating and siphoning because they are full of air and even hot packing them doesn’t get rid of all the air. You’re good as long as you don’t lose more than half the syrup to siphoning.
