• Chicken and Stuffing casserole

You can find a similar recipe on the side of boxed stuffing but for mine I did:

Two chicken breasts cut into bite size pieces and seasoned with olive oil, salt, pepper, garlic, and Italian seasoning. Sautéed these and added half a bag of frozen diced onion and a whole bag of frozen peas & carrots. Once these were cooked through I added a family size can of Cream of chicken and about half a cup of chicken broth. I seasoned with the same seasonings I put on the chicken.

Then I put this mix in a 9×13 casserole dish and topped with two bags of boxed stuffing mix (prepared according to directions). Then I bake (covered with foil) it at 375 degrees for about 30-40 minutes until heated through.

-Breakfast burritos.

Two bags of frozen diced potatoes with onions and peppers sautéed until cooked.

One pound of bacon chopped up and cooked

12 eggs scrambled

Cheese

Made 10 nice sized burritos.

  • Cinnamon Roll Blondies and Pumpkin Snickerdoodles: these are both boxed mixes from Trader Joe’s. I highly recommend both – they’re so good!
