Here’s the recipe to go with the pictures to help make it a bit easier for you if you plan on trying this out.
1. Marinate 2 pounds of boneless skinless chicken thighs in a mixture of 4 teaspoons of tandoori powder, 2 teaspoons of garam masala, 1 tablespoon each of ginger and garlic paste, 1 tablespoon of salt (this has to be salty for the marinade to work), 2 tablespoons of dried fenugreek leaves, juice of 1 lime, ½ cup of greek yogurt 2. Heat a vortex full of charcoal and get the grill to as high as you can, preferably 500+ (Picture 1, 2) 3. Once the grates are hot put the chicken on (Picture 3) and cook for 15 minutes with the lid on 4. Sear the chicken on the grates to get the char marks (Picture 4) 5. Take chicken off and let rest (Picture 5) 6. Top up charcoal if needed and put a cast iron pan on to heat up (Picture 6) 7. Add in 3 medium grated onions (Picture 7) and cook until they start to brown (Picture 8) 8. Add in 1 tablespoon each of ginger and garlic paste (Picture 9) 9. Add in 1 tablespoon of kashmiri chili powder (or smoked paprika), 2 teaspoons of coriander powder, 1 teaspoon of cumin powder and 2 teaspoon of garam masala and let toast for few seconds (Picture 10) 10. Add in 4 pureed tomatoes and cook until the mixture with the onions takes on a relish like consistency (Picture 11 & 12) 11. Add back 2 cups of water and stir until sauce reforms (Picture 13) 12. Add in ½ cup of cream, and 2 tablespoons and stir (Picture 14) 13. Add chicken back in, mix everything and serve (Picture 15) with anything you want, usually it’s with rice or naan, but it also makes for a mean pasta sauce or on top of grits or polenta
