I laid one egg slightly atop the other and removed them from the pan with the cheddar on top. It allows the cheddar to melt slightly and the yolks to stay a semi-runny, which is how I prefer them. Once sandwiched, I can cut down the middle without breaking yolk and enjoy biting into one in each half.

That’s some nice melt you’ve got going there.
I love fried egg/mayo sandwiches. I do them without cheese, and prefer them with really runny yolks…But…Hell yeah that’s a good sandwich!
