Ingredients

5oz (142g) baby spring mix
5oz (142g) baby arugula leaves
1 cup cherry tomatoes, halved
1/3 cup pine nuts, toasted
5-6 dried figs, sliced
Shaved kefalotiri or parmesan cheese
For the Dressing:
1/3 cup balsamic vinegar
¾ cup extra virgin olive oil
2 tablespoons honey
Sea salt
Freshly ground black pepper
Instructions
Make the vinaigrette first by combining the balsamic vinegar, olive oil, honey, salt and pepper. Whisk well to emulsify and set aside.
Place all of the other ingredients into a salad bowl leaving out the pine nuts and parmesan cheese.

Pour the salad dressing over the salad and mix well so that everything is coated. Add the nuts and cheese. Serve!

  1. Hmmm…. Im usually not a fan of sweet…but now you have me thinking of the orange cranberry almonds from Girl Scouts. … theyre v good….or pumpkin spiced pumpkin seeds from Trader Joe's….
    I'm lucky that I can get relatively cheap pine nuts here (that same supermarket chain that has Portuguese/Spanish/Greek foods).

  2. Yani, the children's father was a great cook. He nor YiaYia ever did a salad like that ever. They were big on basic lettuce with either dill or mint and red wine vinegar. I have been looking and asking about a dish YiaYia use to do but have come up with zero results and I suspect it was a Greek Turkish fusion. Everything yiayia cooked was amazing. This dish I have failed to duplicate is with grated tomatoes, whisked eggs and eggplant. I have tried sooo hard but have failed as it tastes nothing like what YiaYia use to do. Do you know of such a dish? I have scoured the internet.
