1 lb shrimp
1 zucchini, sliced
1 summer squash, sliced
4 tbsp butter, melted
2 garlic cloves, minced
1/2 lemon, juiced
2 tbsp minced fresh parsley
1/4 tsp salt
1/4 tsp black pepper

1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. In a small bowl, combine the melted butter, garlic, lemon juice, parsley, salt and pepper.
3. Pour 1/2 of the butter mixture over the zucchini and squash, toss well and place on the baking sheet in a single layer.
4. Bake zucchini & squash for 5-7 minutes. Meanwhile, toss the shrimp in remaining butter mixture.
5. Add shrimp to the baking sheet and bake for an additional 10 minutes, or until the shrimp is pink and opaque.
Serve with rice, pasta or ravioli.
