Its always "cook your food bro!!" In the middle. We eat it, we live, but its pink. You can see the crust, i was proud of that! The bun i didnt even try, i was all patty tonight. Im sick of screwing up everything so now im working on 1 thing at a time!

I dont have a center bite because it was pink.

How do i not burn the '$#>2>&$' out of the patty, but still make it looks safe inside?!? Nobody wants a med-rare burger!!!

    If you’re looking for a crusty patty cooked all the way through, smash patty is the easy way. It’s my go-to because it’s quick and easy to duplicate for more than one person.

    If you want a thicker bite, just stack your patties.

    If you want to stick with the thicker patty, treat your burger more like a steak. Pan temp should be right at 300-350 f, plenty of butter in your pan, flipping every 30 seconds until your crust has formed and your internal temp is where you want it.

    If it’s too crusty and not cooked through for your thickness, lower temp and try again.

    Low and slow my friend. Whether it’s in the oven, on a cast iron pan or a grill, low heat and let it take some time. Get a meat thermometer if you gotta and check on it while cooking.

    I learned after much practice to cook only to med rare and then wrap them in foil and let them steam inside on the upper rack of grill until cooked to medium, the way I like it. It makes for a far more juicy and evenly cooked burger.
    Also, don’t smash the burger as it cooks. Let it sear.

    Stop listening to assholes on the internet who say the most ridiculous things. The number one stupidest thing said in this entire sub is that meat that is cooked rare is unsafe and that it’s not good? Not only is it safe, and you never hear about people getting sick from eating it that way. It has way better texture and tastes infinitely better than if it’s well done. Good luck trying to find a story of someone who actually got sick from eating a medium rare Burger.

    If every restaurant under the sun that sells burgers is allowed to offer you a burger cooked rare or medium rare. Then it’s definitely not some health crisis, or they wouldn’t be able to sell it that way.

    Add a lid on top of your pan for the first side

    Thinner patties or lower temperature.

    In the US medium rare / medium is common for burgers. I share your aversion.

    Idk. I had to throw out grassfed patties because my bro did me a favor and cooked them but they were raw inside and had sat on the counter for an hour. He just didn’t realize and I wasn’t taking chances. Maybe reverse sear? Put them in the oven, then take out and sear in a pan.
