It's not pretty but it's done.

Top row is slow cooker pork with sauteed onion and peppers, black beans from a can and old jasmine rice from Indian take out – NO WASTE HERE

The 2 on the bottom left are chicken with mushroom risotto and spinach

Then egg bites and roasted sweet potatoes

Finally, 2 salads with chicken on top

    Slow cooker pork

    2lb pork butt. Trim the fat of you prefer. Throw in half a sliced onion. I Seasoned with chicken stock, garlic powder, Worcestershire sauce, black pepper, chili powder, cumin and some Korean bbq marinade I had in the back of the fridge. Stir to combine everything together. Everything went in the instant pot, pressure cooker mode high for 1 hour.

    Chicken Risotto

    Chicken thighs were put in the oven for 40 minutes at 350°. I seasoned with salt, black pepper, garlic powder, onion powder. Then took them out of the oven, let them cool and chopped the chicken up. The risotto was a pack I got from Aldi’s. Literally just add water and boil. I added butter sauteed mushrooms and frozen spinach for an extra kick.

    Egg bites

    Silicone mold with six egg holes. I’m sure you can get one on Amazon but mine was a gift. I use four large eggs split between the six holes. I add already cooked and chopped bacon, then cheese, and any veggies I have left over. Then I bake in the oven for 25 minutes at 350 °. Once they’re done, let them rest for a few minutes. Then pop out of the molds onto a cooling rack.

    Sweet potatoes

    I peeled four sweet potatoes, diced them up, put them in a large Ziploc bag. Then added some olive oil, black pepper, salt, paprika, garlic powder, onion powder. I seal the Ziploc bag and shake up until all the seasoning is evenly coating the sweet potatoes. Then I dump them onto a baking dish lined with aluminum foil. Those bake in the oven for 30 minutes at 375°

    Salads

    I chopped up romaine, kale, arugula, red onion, tomatoes, and brussel sprouts. Then I added Parmesan cheese and the leftover chicken that didn’t go in the risotto.

    I hope this is ok. I don’t really measure when I cook. I just taste as I go, and see if things look good.
