Easy meal prep for lunches early this week. Fajita seasoned chicken thighs with yellow rice and blistered tomatoes

    Chicken- bought boneless skinless chicken thighs, seasoned with chili powder, garlic powder, cumin, onion powder and salt and pepper. Also cut up some onion and roasted everything in the oven at 400 until cooked through. I like to broil it a little at the end.

    Rice- bought the Vigo yellow rice and cooked it in the rice cooker. Super early and flavorful.

    Tomatoes- added some olive oil, garlic and salt and pepper and roasted in the oven until nice and soft, also broiled at the end.
