As a base I always use whole grain bread with seeds, add hummus/cottage cheese/ricotta, avocados sprayed with evoo and freshly ground salt+pepper and tomatoes on top.
Any leftover vegetables can be added like bell pepper, cucumber or radish.
I could eat this every day 🙂

    That looks like Pumpernickle. I eat loads of it. You can buy them in packs of 8 or something. At amazon and other bulk places you can buy larger packs of like 10 8-packs. Try a small pack first to see if you like it and it works with your health concerns.

    I live in central EU, in Aldi and Lidl and also Spar there are a couple of options. The name I got last time is Dreisaatbrot.
