The recipe said to use a food mill, which I can borrow from my mother. I wanted to know if an immersion blender would work as well.

I used an immersion blender and it turned out great
An immersion blender could potentially work but you would need to do more prep beforehand. The advantage of a food mill (I use a Chinois strainer for applesauce), is that you don’t have to peel, core or stem the apples because the mill or sieve catches it all. The immersion blender might also increase the air whipped into the applesauce.
