I guess it might be mold, according to [this](https://gardening.stackexchange.com/questions/53271/what-is-this-white-mold-growing-in-my-germinating-avocado-roots). I never started my pits in water, so maybe this is something common. Usually, peel the outer skin and plant 2/3 of the pit in damp soil
Those are the beginning of roots all those white things are going to be roots plant in some soil
When I start from seed, I usually start a bunch and lose 50–80% before any succeed. I started 5 avocados at the same time and only have 1 tree.
Looks like Mycorrhiza according to u/ILayWood12. They said it’s a symbiotic fungus that grows on the rhizome of the plant that should not be wiped off.

I did some additional googling and I agree with them.

Not 100% sure — I have very little experience with avocados that doesn’t involve sushi or guacamole — but those look like the kind of proto-roots that a lot of plants get on their stems. I’m guessing the bits were they’re still fluffy and white have been in pretty high humidity conditions so it hasn’t been air-pruned, or those bits were under water? Otherwise they’d just be little lumps like you’ve got higher up on the stem where it’s green.
They’re roots from the stem sitting under water. Too much of the plant is under water.
