I thought I was done baking for the day but suddenly I couldn't help this craving for a cornmeal cake, and I keep those blueberries in the freezer for a reason! made this quick easy skillet cake from sweetsimplemasala with some lemon extract in place of zest. fluffy, tart, and i love the hint of cardamom. the batter felt a bit too thick as I mixed it up (my fault I believe) but it all turned out lovely! I'll have to keep this one up my sleeve for whenever the corn craving hits lol
