Turkish Simple comfort food Mercimek Bulgur Pilavı Recipe | Masoor/Lentil and Bulgur Pilaf/Khichadi

Mercimek (Lentil) and Bulgur Pilav or Masoor Bulgur Pilav:

Ingredients:
1 cup red lentils (masoor dal)

1 cup fine bulgur

1 medium onion (finely chopped)

2 tbsp olive oil or butter

1 tbsp tomato paste

1 tsp paprika

1 tsp cumin powder

4 cups water or vegetable broth

Salt and pepper to taste

Fresh parsley (optional for garnish)

Instructions:

Cook the Lentils:

Rinse the red lentils thoroughly.

In a large pot, add 2 cups of water (or broth) and bring to a boil.

Add the lentils and cook for 10-12 minutes until they’re soft but still hold their shape. Drain and set aside.

Sauté Onions:

In the same pot, heat olive oil or butter over medium heat.

Add the finely chopped onion and sauté until soft and golden.

Add Tomato Paste and Spices:

Stir in the tomato paste, cumin, and paprika. Cook for 2 minutes to release the flavors.

Add Bulgur:

Add the bulgur to the pot and stir to coat it with the tomato and spice mixture.

Simmer:

Pour in 2 cups of water or broth and bring to a boil. Lower the heat and let it simmer for about 10-12 minutes, or until the bulgur absorbs the liquid.

Combine Lentils and Bulgur:

Once the bulgur is cooked, add the cooked lentils into the pot. Stir well to combine.

Season with salt and pepper to taste.

Rest and Serve:

Remove from heat and let the pilav rest for a few minutes with the lid on.

Fluff with a fork before serving. Garnish with fresh parsley if desired.
