Not sure if this totally qualifies, but here was my dinner tonight: Turkey meatballs w/ spinach and feta, seasoned potatoes, bean salad, jalapeño greek yogurt dip, multigrain rice and pickled red onion! 🥙

Meatballs
-mix ground meat of choice with spinach, red onion, garlic, fresh basil, beef broth gelatin (optional), and feta cheese
-take one spoonful and form into ball
-cook at 400°F for 20 minutes turning once (I used an air fryer!)

Bean Salad
-mix chickpeas, cucumbers, red onion, tomatoes, peppers, and feta
-add olive oil, salt, pepper, oregano, red wine vinegar, mustard, and lemon juice
-mix and let marinate

Potatoes
-cut into fry shape, toss in olive oil, salt, pepper, paprika, garlic powder, and dill
-bake at 400°F for 20 minutes turning once

Jalapeño Dip
-blend olive oil, jalapeño, cilantro, basil, garlic, and salt before adding in Greek yogurt
-continue blending until well incorporated

    Yum! I love a bean salad. It’s so versatile and hearty and filling. The rest looks great too, but I just made a huge amount of bean salad today to eat through the weekend so I have it on my mind and yours looks delicious!
