I finally made my first loaf!! I have a lot of bread making experience, but have never made sourdough before. I started making my starter at the end of July and I finally felt confident to make some bread with it.

Here’s how I made it. Im still very new to learning so I’m not sure about some of the lingo yet.

100g starter I fed the night before
300g water
400g unbleached all purpose flour
50g whole wheat flour
12g salt

Let sit 30 min, then stretch and fold every 30 min for 2 hours. I might have done this 5 times, I lost track lol.

I let it sit for 4 hours, then shaped it and let it rise in a basket for 90 minutes.

Baked in a Dutch oven at 450 F for 20 minutes, then uncovered and baked for another 25 minutes.

It was delicious!!! A little gummy, so I probably needed to let it ferment a lot longer. Any tips are appreciated. I have no clue what I’m doing, but I’m very happy with my first attempt!

I’ve heard to let cool for at least 2 hours before cutting, that mightve contributed to the gumminess. It looks great

My first loaf was from oven to mouth with lots of butter, so good. You nailed it girl!!

Next time let it cool completely, probably ruined the texture😅

Hi. Congratulations and welcome. That is an impressive first SD loaf. Aside what others have said about cooling nothing to add.

    Happy baking

As everyone has said, yes let it cool for a good long while. I think everyone has cut into their first loaf right out of the oven haha. I know that thing was prolly gummy. BUT that was a great first loaf! Beautiful stuff

This is an excellent loaf, especially for a first one! Definitely let it cool before slicing to let the crumb set. It’ll help ward off a gummy interior.

Wait at least one hour before cutting. It’s still cooking when it’s hot, that’s why it’s gummy: it hadn’t finished cooking.
Stay strong next time: it’s still warm even if you cut it 2 hours later (I tried and it’s really true)
