chocolate and custard eclairs

    sooo good, these didnt last long

    makes about 16

    For the choux…

    225ml water

    60g butter

    1/2 tsp salt

    125g plain flour

    4 lg eggs

    For the chocolate Glaze…

    75ml water

    100g caster sugar

    80g 54% chocolate

    25g butter

    custard cream filling

    100g Custard cream

    100g whipped cream

    10g sugar

    whip, mix then pipe into bag

    choux

    Pot add water, butter, salt heat up to just come to a boil

    Add flour, cook and stir for 3 mins on the heat to cook out the flour

    Place dough into mixture, then add eggs 1 at a time on a low speed

    It should just drop off the spoon with some mixture hanging onto the spoon

    Add to piping bag and pipe to 10cm

    170C 20-24 mins

    Looks golden

    Make chocolate glaze

    Pot add water, sugar add to medium heat wait till it bubbles

    Whilst hot add chocolate and butter and stir till it becomes smooth

    Fill up eclairs

    Punch 2 chop stick holes, then fill with cream

    Then dunk them into the chocolate sauce

    Let them set
